LA VINIFICATION
Harvest: Hand-picked, sorted on the vine
Assembly: 100% of the 2019 harvest
Vinification:
- Cœur de Cuvée.
- Fermented and matured in temperature-controlled stainless steel vats on fine lees.
- Chilled and lightly filtered before bottling.
- 50% of the Chardonnay is matured in new 205 and 300 litre Champagne casks - Medium heat
Ageing: 48 months minimum on lees in bottle
Drainage: Minimum 4 months before marketing
Dosage: Less than 6 g/l - EXTRA-BRUT
