Average age of vines: 25 to 35 years old

LA VINIFICATION

Harvest: Hand-picked, sorted on the vine
Assembly: 100% Chardonnay from the 2021 harvest
Vinification:

• Fermentation and ageing in stainless steel vats and 30% in wood for 7 months
• Chilled and lightly filtered before bottling

Ageing: 30 months minimum on lees in bottle
Drainage: Minimum 4 months before marketing
Dosage: Less than 6 g/l - EXTRA-BRUT
