LA VINIFICATION
Harvest: Hand-picked, sorted on the vine
Assembly: 70% of the 2018 harvest
Vinification:
- Fermentation and ageing in temperature-controlled stainless steel vats on fine lees
- Chilling and filtration pressure before bottling
Ageing: 60 months minimum on lees in bottle
Drainage: Minimum 4 months before marketing
Dosage: Less than 6 g/l - EXTRA-BRUT
