Terroir: Montagne de Reims - Avenay Val d’Or PREMIER CRU
Soil type: Clayey limestone
Grape varieties: 75 % Pinot Noir (including 8 to 10% Coteaux Champenois from the Avenay-Val d'Or vineyard) and 25% Chardonnay
Average age of vines: 25 to 35 years old

LA VINIFICATION

Harvest: Hand-picked, sorted on the vine
Assembly: 70% of the 2021 harvest, 30% reserve wines
Vinification:

  • Fermentation and ageing in vats with fermentation on fine lees
  • Chilled and lightly filtered before bottling

Ageing: 30 months minimum on laths in bottles
Drainage: Minimum 4 months before marketing
Dosage: Less than 6 g/l - EXTRA-BRUT
