Vinification:
- Cœur de Cuvée / Fermentation and barrel ageing
- 205, 300 and 600 litre Champagne barrels
- Long, gentle heating - Stirring - No gluing
Ageing: 60 months minimum on laths in bottles
Drainage: Minimum 4 months before marketing
Dosage: 3.5 g/l - EXTRA-BRUT
