LA VINIFICATION

Harvest: Hand-picked, sorted on the vine
Assembly: 100% of the 2018 harvest
Vinification:

  • Cœur de Cuvée / Fermentation and barrel ageing
  • 205, 300 and 600 litre Champagne barrels
  • Long, gentle heating - Stirring - No gluing

Ageing: 60 months minimum on laths in bottles
Drainage: Minimum 4 months before marketing
Dosage: 3.5 g/l - EXTRA-BRUT
